Tanya's Courgette Salad

Ingredients
Serves two to three

500g (1lb) young courgettes
2 tablespoons olive oil
salt and pepper
5-6 tablespoons Greek yoghurt
2 tablespoons roughly chopped basil leaves

Method

Wash and grate the courgettes, unpeeled. Heat the oil in a frying pan and add the courgettes. Sprinkle with salt and pepper and toss in the oil until just warmed through. Mix the basil into yoghurt. Place the courgettes in a serving dish and pour the yoghurt over.
